Spinach & Imitation Crab Salad

This is an example of a salad I have for lunch.  This exact salad has probably never happened again.  The variations are endless.

The imitation crab is a processed seafood make of starch and finely pulverized white fish (surimi).  So it has fish which is good, but also simple carbohydrates and lots of salt, so I have it infrequently.

Ingredients:

·     3 cups spinach

·     1 cup tomatoes of any kind, cut wedge size

·     ½ cup cucumbers rough chopped

·     1/3 cup crab, this is half of the package

·     1 tablespoon olive oil

·     1 tablespoon glaze balsamic vinegar

I put all of this in a large soup bowl, and drizzle with the olive oil and balsamic glaze.  I keep my olive oil in a squeeze bottle I got at Capital City Restaurant Supply In Bismarck and this makes drizzling so easy.
