Slow Cooker Lentil Soup Recipe



     2 tbsp olive oil

     2 cups lentils (rinsed)

     1 large onion, chopped, I use sweet

     2 cloves of garlic

     1 tsp crushed red pepper

     4 bay leaves

     ¼ tsp ground nutmeg

     1-6 oz can of tomato paste

     1 ½ quart of broth, I use chicken

     1 tsp salt

     pepper to taste


Combine ingredients in slow cooker and leave on high for 3 to 4 hours.  If you are going to be gone all day, 8 to 9 hours, fill with water to 1-2 inches below the top of the slow cooker.  Remember, the only difference between low and high settings on a slow cooker is that the high setting gets to the temperature faster. So when you are using it for this long, either setting will do about the same.
