Salt the Vegetables Recipe
Just a little salt makes so much difference in the taste of fresh vegetables. This combination is tasty and pretty.
1 yellow sweet bell pepper, sliced
1 English (burpless) cucumber, crinkle cut in slices
1 cup or so of cherry tomatoes (have you tried Flavor Bombs?—so good!!
2 carrots, peeled and cut in chunks
Kosher salt to taste
Combine in a sealable container, salt lightly, cover and give a toss. If you do this a few hours or more before eating, they taste better. Before eating, allow to drain through a strainer or colander to get rid of excess fluid.
With added salt, the vegetables are much tastier and look so much more vibrant! You probably already knew this, but I didn’t, so just in case you didn’t. Please let me know what you think.
