Slow-Cooker Sausage, Potato and Spinach Stew Recipe

     1 pound Hot Italian sausage (the bulk Italian sausage from our local store, Dan’s Supermarket, but Johnsonville Hot Italian Sausage removed from casings worked great)

     1 large onion, chopped

     1-28-ounce can diced tomatoes

     2 tablespoons tomato paste

     2 cloves garlic, chopped

     kosher salt and black pepper

     2 large potatoes rough chopped (about 1 pound)

     7 cups fresh spinach


1.  Combine the sausage, onion, tomatoes and their juices, tomato paste, garlic, 1 cup water, and ¾ teaspoon each salt and pepper in a 4- to 6-quart slow cooker.  Nestle the potatoes in the liquid.

2.   Cover and cook until the potatoes are tender, 6 to 8 hours on high.  Top with the spinach and give it a stir.  Allow the spinach to wilt before serving.

3.   Serve topped with parmesan cheese and a drizzle of olive oil, if desired.
