French Tea Cakes (Madeleines)


4 oz. sweet butter
1 cup sifted all-purpose flour
1 tsp. baking powder
¼ tsp. course salt
2/3 cup sugar
Zest from ½ lemon
2 eggs, separated
2 tsp. orange flower water
Preheat oven to 425 degrees.
Well in advance, soften butter but do not let it melt.
Mix flour, baking powder, salt and sugar in a bowl. Add lemon, stir in egg yolks and orange flower water, then incorporate the butter. Whisk egg whites until stiff and fold into the batter. Spray molds with Pam cooking spray and fill each shell with batter half full. Bake in 425 degree oven for about 15 minutes or until risen
and golden brown. Let rest a few seconds before turning them out onto a cake rack to cool. But not long. Enjoy!
Makes 24 madeleines.

I wanted to make cookies for Billy, our second son, for his birthday and asked him what kind he wanted. He said, “Not Madeleines because Margot (his little daughter) will want them all.” We went with chocolate chip.
